We all deserve a healthy, hearty and wonderful winter stew, but not all of us enjoy eating meat. However, you can still enjoy a warm bowl of stew if you follow a vegan or vegetarian stew, and the best party is that it takes a lot less time to make. This baked bean stew with pap wings is an interesting and fun way to serve a beautiful plant-based meal to your family. You’ve got baked beans that are often in pantry for a protein source but most of the fun comes from the grilled pap rings which you don’t see that often, or ever.

BAKED BEAN STEW WITH PAP RINGS TIPS

The pap/cooked maize meal rings are easier to make than they sound and the grilling adds some texture along with the flavour from the herbs you’ll be including. Beans are known to help lower cholesterol, they are packed with protein and their meaty substance is an economic substitute for meat. The rest of the vegetables also add all of those vitamins and minerals, especially Vitamin A and C from the peppers!

BAKED BEAN STEW WITH PAP RINGS RECIPE

INGREDIENTS

Pap rings

  • 4 cups water

  • salt

  • 500 ml maize meal

  • 2 tbsp rosemary

  • 1 tbsp parsley

Baked beans stew

  • 2 tbsp oil

  • 2 onions, finely chopped

  • 3 large cloves garlic, finely chopped

  • 1 green pepper, cubed

  • 1 red pepper, cubed

  • 1 yellow pepper, cubed

  • 2 tbsp mixed herbs

  • 1 can (410 g) tomatoes

  • 1 can (410 g) baked beans

  • salt and pepper

METHOD

Pap rings

  • Boil the water in a medium-size saucepan and add the salt.
  • Reduce the heat and add the mealie meal without stirring. Cover with the lid and cook for about 10 minutes.
  • Add the herbs and stir until well combined. Cook for a further 10 minutes until the pap is stiff and it makes one big lump and is not crumbly.
  • Transfer to a lightly oiled surface and press using your hands until flat. Cut into rounds and grill for 5 minutes until a bit crunchy. Set aside in a warm place.

Baked beans stew

  • In the meantime, heat the oil in a frying pan and fry the onions, garlic and peppers for four minutes until slightly soft.
  • Season with mixed herbs and add the tomatoes. Reduce the heat and simmer for eight minutes.
  • Add the baked beans and cook for a few more minutes.
  • Season with freshly ground pepper to taste and serve with the pap rings.
